Pancake flop…

Good morning everyone! I hope everyone has had a great weekend so far! This morning I decided to sleep in, but my body wouldn’t let me sleep past 9:30.

I decided I wanted something different this morning, so I attempted to make some pumpkin pancakes…attempted being the KEY word. It turned into a gross, liquid mess that I didn’t even document with photos.

Putting my losses aside, I made pumpkin french toast, which was more successful.

I also whipped up some egg whites for some protein! 🙂

I topped the toast with half a banana, honey, and some cinnamon!

Pumpkin French Toast (this made 2 pieces so feel free to double the recipe!)

1 egg
Splash of almond milk
2 T Pumpkin
1/2 – 1 tsp cinnamon
2 slices of bread (ezekiel, etc)
1) Mix together egg, almond milk, pumpkin, and cinnamon in a shallow pan.
2) Dip both sides of bread into mixture. Scrap off any excess egg mixture.
3) Put bread on hot pan and cook until egg mixture is fully cooked.
4) Flip over and cook other side.
5) Sprinkle with cinnamon and top with fruit/syrup of your choosing.
