That’s a wrap!!!

Wow! A lunch time post? I know, I know! Hold onto your hats folks! 🙂

I have a little time before my next class and I wanted to share my DELICIOUS lunch with you all. I have to say, I’m quite proud. 😉 I think it’s pretty tasty- but that could have been because I hadn’t eaten since breakfast so I was RAVENOUS!

Balsamic Tofu Roll-Up (1 serving)

1 Whole Wheat Wrap of your choice
1/4 cup cheese of your choice (I used reduced fat feta and mozzarella!)
A handful of spinach
3-4 cherry tomatoes (halved)
Vegetables of your choice (I had some leftover veggies from last night which included broccoli, asparagus, onion, and mushrooms)
1 thick piece of tofu (cubed)
Balsamic vinegar for drizzling
Black pepper
1) Spread cheese across wrap and put in microwave for 30 seconds to melt cheese.
2) In a frying pan, cook tofu (seasoned with pepper and balsamic vinegar) until done.
3) Spread spinach, tomatoes, and veggies across wrap.
4) Remove tofu from stove and place on top of the veggies.
5) Drizzle extra balsamic vinegar on top and roll up the wrap.
6) Slice in half and enjoy!

For something that I threw together on the fly, I have to admit, it’s pretty good.

    Well if I had to choose I would say a Strawberry Fields salad is my favorite. Made with mixed greens, cucumbers, grape tomatoes, carrots, red onion, snap peas, and an accent of reduced fat feta cheese. Of course fresh sliced strawberries added on the perimeter gives it a nice refreshing, flavorable taste. For protein, grilled chicken breast slices on top makes it a nice balanced meal. If I were allowed to have breads on my diet right now, I would have chosen the whole wheat pita bread like you did. Thanks for sharing sweetie. Hope you are having a great evening! :)*
