Going Bananas!

Holy moly! I may have created something really great. Like really great. I may be addicted to it and you may be too once you make it. 😉

In an attempt to make the holiday’s a little healthier, I experimented in the kitchen today. There were ripe bananas that needed to be used so I thought I would make the banana bread my mom made when I was younger, but with a healthy twist.

Whole Wheat Banana Bread


1/2 c. sugar (could substitute honey if you wish!)
1/3 c. applesauce
1 t. vanilla
2 eggs
1 1/2 c. mashed bananas (4 large bananas)
1 3/4 c. whole wheat flour
1/2 t. salt
1 t. baking soda
1/4 c. hot water
1/2 c. chopped walnuts (optional)
4 T dark brown sugar (optional)
1 T margarine (optional)

1) Preheat oven to 325 degrees.
2) Mash bananas with a fork until no thick pieces remain.

3) Mix together applesauce and sugar in a medium bowl.
4) Add eggs and mix until well combined.
5) Stir in bananas and vanilla.
6) Stir in flour and salt until just moistened. Do not overmix!!!
7) In a separate bowl, mix together baking soda and hot water and then add to batter.
8 ) Spread batter into a greased 9×5 loaf pan.
9) (Optional) In a separate bowl mix together brown sugar and margarine until mixture is coarse and crumbly.
10) (Optional) Spread walnuts on top of bread and sprinkle brown sugar mixture on top.
11) Bake for 55-60 minutes or until center comes out clean.
12) Let cool in pan for 10 minutes before transferring to a wire rack to cool.

My family loved it! And they were surprised that it was made with whole wheat flour and contained almost no fat! 🙂 I felt like a million bucks! I can bake! 🙂

The cookies I made tonight weren’t as successful. They ended up tasting like Play-Doh. Eh, you win some you lose some. 😉

I wasn’t too hungry tonight for dinner so I kept it fairly simple:

Salad, roasted veggies, and quiona.

I also had half a slice of warm banana bread…

Mmmm…. I’m off to bed! I’m hoping to tackle 4 miles tomorrow morning, since I had to take the day off today because I was SORE from Saturday!
