Holy moly! I may have created something really great. Like really great. I may be addicted to it and you may be too once you make it. 😉

In an attempt to make the holiday’s a little healthier, I experimented in the kitchen today. There were ripe bananas that needed to be used so I thought I would make the banana bread my mom made when I was younger, but with a healthy twist.
Whole Wheat Banana BreadIngredients:
1/2 c. sugar (could substitute honey if you wish!) 1/3 c. applesauce 1 t. vanilla 2 eggs 1 1/2 c. mashed bananas (4 large bananas) 1 3/4 c. whole wheat flour 1/2 t. salt 1 t. baking soda 1/4 c. hot water 1/2 c. chopped walnuts (optional) 4 T dark brown sugar (optional) 1 T margarine (optional)
1) Preheat oven to 325 degrees.
2) Mash bananas with a fork until no thick pieces remain.
11) Bake for 55-60 minutes or until center comes out clean.
12) Let cool in pan for 10 minutes before transferring to a wire rack to cool.
My family loved it! And they were surprised that it was made with whole wheat flour and contained almost no fat! 🙂 I felt like a million bucks! I can bake! 🙂
The cookies I made tonight weren’t as successful. They ended up tasting like Play-Doh. Eh, you win some you lose some. 😉
I wasn’t too hungry tonight for dinner so I kept it fairly simple:
Salad, roasted veggies, and quiona.
I also had half a slice of warm banana bread…
Mmmm…. I’m off to bed! I’m hoping to tackle 4 miles tomorrow morning, since I had to take the day off today because I was SORE from Saturday!
