Balsamic Tofu Roll-Up


Ingredients:
1 Whole Wheat Wrap of your choice
1/4 cup cheese of your choice
A handful of spinach
3-4 cherry tomatoes (halved)
Vegetables of your choice
1 thick piece of tofu (cubed)
Balsamic vinegar for drizzling
Black pepper

Directions:
1) Spread cheese across wrap and put in microwave for 30 seconds to melt cheese.
2) In a frying pan, cook tofu (seasoned with pepper and balsamic vinegar) until done.
3) Spread spinach, tomatoes, and veggies across wrap.
4) Remove tofu from stove and place on top of the veggies.
5) Drizzle extra balsamic vinegar on top and roll up the wrap.
6) Slice in half and enjoy!
