The Cross Your Fingers Casserole (Done The Singing Runner Way!)
Ingredients (for 2-3 servings):
1/2 cup barley (measured dry) 1/4 cup chopped tomatoes 1 small (8 oz) can tomato sauce 1/4 cup chopped zucchini 1 can tuna 1/8 cup salsa 1-2 handfuls of spinach Pepper Dash of sugar (if desired)
Directions: 1) Preheat oven to 375 degrees 2) Boil water and cook barley according to package directions 3) In a medium bowl, mix together tomato sauce, drained tuna, zucchini and tomatoes. 4) Add spinach. Mix in pepper and sugar (if desired- I added it because my sauce needed more balance) 5) Mix in cooked barley. 6) Pour mixture into a casserole dish. Top with salsa. 7) Cover and cook for 35-40 minutes.
